It wouldn’t be summer if we didn’t talk about basil. Even just the word makes me swoon. To most people, basil is all about mincing for pesto or layering between fresh tomatoes and mozzarella. Both are delicious, yet this time of year, basil goes into just about everything I serve from herb butters to sorbet.
I don’t limit my choice to simply the sweet Italian green leaf, however, and equally love cinnamon basil for custard, lemon basil for salad dressing and purple basil for vinegar. I reserve the mammoth leaf basil to neatly wrap around a piece of fish for the grill.
Basil is one of the few crops that is lovin’ this hot dry weather, and to my mind there is no such thing as too much of a good thing. Follow this link to try a few of my favorite summer recipes.
